Classic Rolo Cookies for Christmas!


INGREDIENTS
  1. 2½ cups of flour
  2. ¾ cups of unsweetened cocoa
  3. 1 tsp baking soda
  4. ½ tsp salt
  5. 1 cup of white sugar
  6. 1 cup of brown sugar, firmly packed
  7. 1 cup of butter
  8. 2 tsp vanilla
  9. 2 eggs
  10. 24-36 Rolo candies (depends on how big you make the cookies)
  11. 1 cup of pecans, chopped
  12. 2 tbsp of white sugar

INSTRUCTIONS
  1. Whisk flour, cocoa & baking soda together completely.
  2. In a large mixer bowl with your paddle attachment, beat the sugars & butter until light & fluffy.
  3. Add vanilla & eggs. Beat well.
  4. Add the flour mixture slowly and blend well.
  5. Combine pecans & remaining sugar in a small bowl..
  6. Wrap about 2 tablespoons of cookie dough completely around 1 Rolo candy.
  7. Roll the cookie ball in the pecan mixture.
  8. Place on parchment paper lined cookie sheet at least 1.5 inches apart.
  9. Bake 14-16 minutes at 375 degrees F.
  10. Cool on tray for at least 5 minutes so the Rolo inside the cookie sets a bit.
  11. Move to cooling rack and cook completely. Or try warm if you are like me and impatient.
